Method
- Brown the turkey hard in a dry-ish pan and break it small. Turkey has little fat, so if you crowd it you will steam it grey and there is no coming back.
- Out with the meat, then onion in oil until properly brown, then garlic and cumin bloomed for thirty seconds.
- Tomato in, cooked until it darkens and the oil comes back out. Meat back in with a splash of water and simmered fifteen minutes.
- Finish with lemon and something fresh. Lean ground meat needs acid at the end far more than fatty does — that is why keema made with turkey usually tastes flat and this one does not.
