Method
- Onion browned properly in oil — brown, not translucent — then garlic and cumin for thirty seconds.
- Tomato in and cooked until it darkens and the oil separates at the edges. This step is the recipe.

- Finish with a pat of butter and more cumin toasted dry and crumbled over. Yogurt and rice at the table.
