Method
- Onion soft, then cumin and chili flakes into the dry fat for half a minute. Spices bloomed in fat taste like spices; spices stirred into liquid taste like dust.
- Tomatoes in and cooked down hard before any liquid goes in, until the pan looks darker and the tomato smells sweet rather than sharp.
- Beans and a little water, then a low simmer for at least thirty minutes. Chili is a time dish and there is no shortcut.
- Salt at the end, and a squeeze of something acid. Cheddar or sour cream on top is fat covering heat, which is the point.
