Method
- Brown the pork hard in batches and leave it in craggy pieces. Grey pork makes grey chili.
- Onion in the rendered fat, then cumin and chili bloomed for thirty seconds until fragrant.
- Tomato in and cooked down until it darkens, then the pork back with just enough liquid to come up the sides.
- Low and long, lid ajar, ninety minutes. Acid at the end — lime or vinegar — because a long-cooked pot always tastes flat until it arrives.
