Method
- 2 oz rum, ¾ oz lime, ½ oz grapefruit, ¼ oz maraschino. Shake hard, double-strain up.
- Maraschino is not cherry syrup — it is dry, funky and assertive, and a quarter ounce is genuinely as much as this wants.
- The original had no sugar at all, which is why it has a reputation for being punishing. A bar spoon of syrup is not a betrayal.
- Grapefruit varies enormously; taste the juice before you pour it and adjust the maraschino rather than the lime.
