Method
- 1½ oz mezcal — less than you would pour of tequila, because smoke is louder than agave — ½ oz lime, grapefruit and soda to top.
- Build over ice, one gentle stir.
- Salt on the rim, and a grapefruit peel rather than a wedge so the oil sits on top of the smoke.
- If it tastes like an ashtray, the mezcal is not the problem: the drink is short of acid.
