easyWhy tonight. Dark rum floated over ginger beer and lime so it arrives in layers. Stir it yourself at the table; that is the point.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- rum
- ginger beer
- lime
Method
- Ginger beer over ice first, then 2 oz dark rum poured gently over the back of a spoon so it sits on top.
- The layer is the drink and the name. Stirring it makes a rum and ginger, which is a fine drink with a different name.
- Lime wedge on the side rather than in it, so whoever is drinking decides when to break the storm.
- Black rum matters here more than in almost any other drink — the molasses is doing half the work.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- rum
- The widest spirit on the shelf.
- ginger beer
- Heat and sweetness with real carbonation behind it, which is why it carries a drink that ginger ale only decorates.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
