easyWhy tonight. Moroccan Ramadan soup without the lamb. Lemon at the table.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- lentils
- tomato
- cumin
- onion
- lemon
Good if you have them, fine if you do not: cilantro.
Method
- Onion soft in oil, cumin and any other warm spice bloomed until fragrant.
- Tomato in and cooked down hard, then lentils and water, and a long slow simmer until the lentils give up entirely.
- It should be thick and slightly claggy rather than brothy. Add water at the end if you have overshot, never at the start.
- Lemon at the table, in quantity, and fresh herbs. This is a soup that tastes finished only after the acid goes in.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- lentils
- The fast legume — no soaking, thirty minutes at most.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
- onion
- The base under most of this library.
- lemon
- Acid you add at the end, not the start.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Turkish mercimek. Blend or smash until it is velvet. Lemon and a thread of oil at the table. Paprika bloomed in oil on top if you want the restaurant finish.

Ezme
Turkish spicy salad, chopped fine, almost a relish. Chili and lemon, not salsa. It should be wet enough to spoon onto kebab, not a pico.
