Method
- Onion soft in oil, cumin bloomed, then the lentils and enough water to cover well.
- Simmer thirty minutes until the lentils have completely lost their shape, then blend it smooth.
- It will look too thin. Let it sit five minutes off the heat and it thickens; then judge.
- The finish is the dish: paprika or chili bloomed in hot oil and poured over each bowl, and a great deal of lemon. Without both it is baby food.
