Method
- Cook the lentils in well-salted water with something aromatic thrown in. Small dark ones hold; the big pale ones turn to soup.
- Drain and dress them while they are hot. This is the whole difference between a lentil salad and a bowl of lentils.
- Onion sliced thin and left in the lemon juice for ten minutes first, so it goes from raw to sharp.
- Parsley and feta cold, at the end. Taste it again once it is cool — it will want more salt and more lemon than it did warm.
