What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- lentils
- onion
- cumin
- lemon
- parsley
Good if you have them, fine if you do not: lettuce.
Method
- Cook the lentils until they collapse and the water has gone, then add the fine bulgur or grain off the heat and cover.
- It swells in the residual heat rather than being boiled, which is what makes the paste hold together.
- Let it cool enough to handle before shaping — hot paste will not hold a shape.
- Squeeze each one in your fist so it takes the print of your fingers. That is the traditional shape and it is not decoration.

Why each of these is on the list
What the ingredients are actually doing
- lentils
- The fast legume — no soaking, thirty minutes at most.
- onion
- The base under most of this library.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
- lemon
- Acid you add at the end, not the start.
- parsley
- Not a garnish, a green note.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
