easyWhy tonight. Turkish spicy salad, chopped fine, almost a relish. Chili and lemon, not salsa. It should be wet enough to spoon onto kebab, not a pico.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- tomato
- onion
- parsley
- lemon
- chili flakes
Good if you have them, fine if you do not: olive oil.
Method
- Everything chopped very fine by hand, close to a paste but not blitzed. The knife work is the recipe.
- Salt the tomato and let it drain a few minutes, or you will be eating soup.
- Onion into the lemon juice first so it loses its rawness while you chop the rest.
- Olive oil, chili and a rest of twenty minutes before it is served. It is better at room temperature and better still an hour later.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- VinaigretteDispersing fat into acid so it stays dispersed for as long as dinner takes, which is all it has to do.separates immediately · greasy · too sharp · dull
- Building a sourSpirit, citrus and sugar in a fixed geometry, then adjusted for how strong the particular bottle in front of you is.thin and sharp · cloying · spirit disappears · no foam
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- onion
- The base under most of this library.
- parsley
- Not a garnish, a green note.
- lemon
- Acid you add at the end, not the start.
- chili flakes
- Heat you can dose. Bloomed in oil they spread through everything; scattered at the table they stay sharp and sit on top. Same flakes, two different dishes.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Mercimek köfte: cooked lentils mashed with onion and cumin, lemon, a lot of parsley. Lettuce cups. No frying. It should hold, not slump.
