Method
- Onion, ginger and chili cooked down with the tomato until the pot darkens and the tomato stops tasting raw.
- That reduction is the base and it can be made hours ahead.
- Coconut milk in and warmed only, never boiled, then the fish added off the boil for five minutes.
- Lime at the end. The fish carries on cooking in the hot stew after the pot comes off.
