Method
- An enormous quantity of onion, sliced thin, cooked in a dry pan first with no fat at all until it collapses and gives up its water. This is the technique and it takes half an hour.
- Only then the fat, the ginger and the chili, cooked until the mixture darkens to a paste.
- Chicken in, coated, and simmered with very little liquid until tender.
- It should be thick enough to eat with bread rather than a spoon. Hard-boiled eggs slipped in for the last ten minutes if you have them.
