Method
- Loosen the peanut butter with hot stock in a bowl first. Dropped into the pot in a lump it never disperses and it catches on the base.
- Brown the chicken hard, then onion, ginger and tomato cooked down until the pot darkens.
- The peanut mixture in only once the tomato has reduced, then a low simmer for forty minutes.
- Never a rolling boil after the peanut goes in — it splits and goes oily. Lime and chili at the end.
