easyWhy tonight. Greens in a loosened peanut-tomato sauce. Collards if you have them.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- kale
- peanut butter
- tomato
- onion
- garlic
Good if you have them, fine if you do not: chili flakes.
Method
- Onion and garlic soft in oil, tomato in and cooked right down.
- Peanut butter let down with a ladle of hot water into a smooth sauce before it goes near the pot. Added straight from the jar it seizes into lumps.
- Greens in, shredded thin, and simmered twenty minutes until they are properly soft.
- Salt hard and finish with lemon. Peanut sauces are rich and go flat fast without acid.

Why each of these is on the list
What the ingredients are actually doing
- kale
- Tough enough to need help.
- peanut butter
- Fat, salt and body all at once, which is why it thickens a sauce as it flavors it.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- onion
- The base under most of this library.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
