Method
- Dry the fish and season it, then sear it hard and leave it alone until it releases from the pan.
- Peppers and onion cooked separately until soft and slightly charred.
- Lime only at the end, off the heat. Acid on fish in the pan starts curing it and the texture goes chalky.
- Paprika and chili in the oil rather than dusted on dry, so they bloom instead of sitting as powder.
