Crisp pork with onion, chili and lime
After Sisig
Chopped pork, a lot of onion, chili, lime, egg on top. Sizzling if you can. It should be sour-hot, not a hash.

What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pork
- onion
- chili flakes
- lime
- eggs
Good if you have them, fine if you do not: mayo.
Method
- Pork cooked until tender first, then chopped small and fried hard in its own fat until the edges are genuinely crisp. Two cooks, and the second one is where the dish happens.
- Onion and chili in at the very end so they keep their bite.
- Lime off the heat, and a great deal of it.
- Egg cracked over it at the table on a plate hot enough to set it. Rich, sour, sharp and crunchy at once — and the moment it goes soft it is over.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- pork
- The forgiving meat. Shoulder takes hours and rewards them, chops take minutes and punish you for one too many, and the fat is the flavor in both cases.
- onion
- The base under most of this library.
- chili flakes
- Heat you can dose. Bloomed in oil they spread through everything; scattered at the table they stay sharp and sit on top. Same flakes, two different dishes.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- eggs
- The cheapest way to turn a side dish into dinner.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Shares eggs, chili flakes, lime
Sambal eggs
A chile-tomato relish, eggs in. It should sting. Rice on the side.
Shares lime, onion, chili flakes
Lime pepper fish
Escovitch logic without the jar: vinegar-hot onions over seared fish. Frozen cod still counts.
Shares lime, onion, chili flakes
Shrimp ceviche
Acid is the heat. Frozen shrimp, thawed, lime until they go opaque. Onion and chili, not a cocktail sauce.
Shares pork, onion, lime
Crisp pork tacos
Hard sear leftover pork until the edges fry.
