Method
- Hard-boil the eggs, peel them, and fry them whole in hot oil until the whites blister and go golden.
- Chili, garlic and tomato cooked down in the same oil until it darkens and the oil separates back out.
- Eggs halved and returned, spooned over rather than stirred.
- Lime at the end. Sweet, hot and sour all at once, and if one of the three is missing you will taste the gap.
