Method
- Garlic and chili warmed in a lot of olive oil until fragrant — this is a chili dish, so the oil should go red.
- Tomato in and cooked down hard until it is thick enough to hold a trench dragged through it. Ten minutes at least.
- Wells, eggs, salt on the yolks, lid on. Four to six minutes.
- Bread grilled and rubbed with a raw garlic clove. The sauce is the dish; the eggs are how you eat it.
