Method
- Fry the fish first and set it aside. The pickle is made separately and poured over — they are never cooked together.
- Onion and pepper cooked briefly in the vinegar with plenty of black pepper, so they stay crunchy.
- Pour it over the hot fish and leave it at least twenty minutes. It is better after an hour and better still cold.
- The acid keeps working, which is the point of the dish and why it was invented.
