Method
- Slice everything as thin as you can. Thick slices need days; thin slices are ready in twenty minutes.
- Warm the vinegar with the sugar and salt only until they dissolve, then pour it over — do not cook the vegetables.
- Hot brine over raw thin slices gives you a pickle that is still crunchy. Boiling them gives you a limp one.
- Twenty minutes is enough to use them. A day is better, and they keep a fortnight in the fridge.
