Method
- The cure is salt and sugar first — that draws water out and firms the flesh before any vinegar.
- Twelve hours minimum under weight in the fridge, then rinsed and sliced thin.
- The pickling liquid goes on after the cure, never instead of it.
- Slice on a long bias with a very sharp knife, and serve it cold with dill and mustard.
