easyWhy tonight. It is a parsley salad, not a couscous salad. Chop more than you think.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- parsley
- tomato
- lemon
- olive oil
- scallion
Good if you have them, fine if you do not: mint, couscous.
Method
- It is a parsley salad with a little grain in it, not a grain salad with herbs. Get that ratio right and everything else follows.
- Chop the parsley by hand with a sharp knife and do it last. A blunt knife or a processor bruises it black.
- Salt the tomatoes separately and drain them, or the bowl floods.
- Lemon and oil, and let it sit fifteen minutes before serving so the grain softens in the dressing.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- parsley
- Not a garnish, a green note.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- lemon
- Acid you add at the end, not the start.
- olive oil
- Two ingredients sharing a name.
- scallion
- Two ingredients on one stalk.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Turkish bulgur salad; couscous is Tuesday. Tomato paste, a mountain of parsley, lemon, scallion. It should be red-green and loud, not tabbouleh you forgot.
