easyWhy tonight. Stir herbs through hot rice off the heat.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- rice
- parsley
- scallion
- lemon
- olive oil
Good if you have them, fine if you do not: dill.
Method
- Blitz the herbs with the oil and a little water into a bright green paste, then fold it through the cooked rice off the heat.
- Cooked into the pot, the herbs go army green and taste of hay. This is a finishing sauce, not an ingredient.
- Season the rice while it is hot, before the herb paste goes anywhere near it.
- Lemon at the end, and serve it warm rather than hot so the color survives.

Why each of these is on the list
What the ingredients are actually doing
- rice
- Starch that either steams or fries, and the two want opposite things.
- parsley
- Not a garnish, a green note.
- scallion
- Two ingredients on one stalk.
- lemon
- Acid you add at the end, not the start.
- olive oil
- Two ingredients sharing a name.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
