What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- lentils
- onion
- cumin
- lemon
- stock
Good if you have them, fine if you do not: garlic, olive oil.
Method
- Onion soft in oil, cumin bloomed until fragrant, then red lentils and plenty of water.
- Thirty minutes until the lentils have gone entirely to pieces, then blend it smooth.
- It will look too thin. Rest it five minutes off the heat before you judge that.
- The finish is the dish: chili or paprika bloomed in hot oil and poured over each bowl, and a great deal of lemon. Without both it is baby food.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- VinaigretteDispersing fat into acid so it stays dispersed for as long as dinner takes, which is all it has to do.separates immediately · greasy · too sharp · dull
- Pan sauceTurning what stuck to the pan into a sauce. Two minutes of work at the end of something you already cooked.watery · too salty · greasy · broken · bitter
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- lentils
- The fast legume — no soaking, thirty minutes at most.
- onion
- The base under most of this library.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
- lemon
- Acid you add at the end, not the start.
- stock
- Body, not flavor — that is the part people get backwards.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
