Method
- Chips are fried twice: once low at 140C to cook them through, then again at 190C to crisp.
- One fry gives you either raw middles or burnt outsides, and no amount of skill fixes that.
- The batter is made cold and used immediately — cold batter hitting hot oil is what makes it shatter.
- Fish fried last so it goes to the table straight from the oil. Drain on a rack, never on paper.
