Method
- Chermoula is chopped rather than blended, and it is a marinade and a sauce made from the same bowl.
- Marinate the fish thirty minutes at most. Longer and the lemon starts to cure it.
- Keep half the sauce back, unused, to spoon over at the end — never serve the marinade the raw fish sat in.
- Sear it hard and dry, having wiped the marinade off, or it steams instead of browning.
