Method
- Char the eggplant until the skin blackens and the flesh collapses. Undercooked eggplant is spongy and bitter.
- Drain the flesh ten minutes — it holds a lot of water that would otherwise thin the dish.
- Tomato and garlic cooked down hard and separately until dry, then the eggplant mashed in.
- Cook it down further together until it is a thick paste. Cumin and lemon at the end, and good oil over the top.
