easyWhy tonight. Yogurt marinade even for twenty minutes. High heat, char on the edges.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- chicken
- yogurt
- cumin
- garlic
- lemon
Good if you have them, fine if you do not: chili flakes, cilantro.
Method
- Yogurt, lemon, garlic and spice, and the chicken in it for at least an hour. The yogurt is doing the tenderising, so a thick one clings and a runny one slides off.
- Scrape most of the marinade off before it hits the pan. Left on, it steams and goes grey instead of charring.
- Screaming hot pan or a broiler, and let it take real color in patches. Even browning is the wrong goal here.
- Lemon and raw onion at the end. The char is the flavor and it needs something sharp beside it.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- chicken
- Two different foods depending on the cut.
- yogurt
- Acid and creaminess together, which is why it works as a sauce with no cooking at all.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
- lemon
- Acid you add at the end, not the start.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
