easyWhy tonight. Warm spice, yogurt, high heat. Stuff into pita with cucumber.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- chicken
- cumin
- garlic
- lemon
- yogurt
Good if you have them, fine if you do not: pita, cucumber.
Method
- Yogurt, lemon, cumin and garlic as a marinade, and at least two hours. The yogurt tenderises where a dry rub only seasons.
- Thighs rather than breast. This is a dish built on fat and a lean cut goes dry in the pan.
- Sear it hard in a single layer and do not move it. The dark crust is what stands in for the spit.
- Rest it, then slice it thin across the grain. Cut thick, it eats like a chop rather than shawarma.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- chicken
- Two different foods depending on the cut.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
- lemon
- Acid you add at the end, not the start.
- yogurt
- Acid and creaminess together, which is why it works as a sauce with no cooking at all.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
