Chip-shop cod
No deep fryer: hot oven or skillet, battered fish, potatoes that actually crisp. Lemon and a sharp sauce. Don't bake them pale and call it healthier.

mediumWhy tonight. No deep fryer: hot oven or skillet, battered fish, potatoes that actually crisp. Lemon and a sharp sauce. Don't bake them pale and call it healthier.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- cod
- potato
- flour
- eggs
- lemon
Good if you have them, fine if you do not: mayo.
Method
- Chips fried twice — 140C to cook through, then 190C to crisp. One fry gives you neither.
- The batter is made cold, thin, and used immediately. Cold batter into hot oil is what makes it shatter.
- Dry the fish and dust it in flour first, or the batter slides off in the fryer.
- Fish last so it goes straight to the table. Drain on a rack, never on paper.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- cod
- Lean, mild and flaky, which makes it a vehicle rather than a flavor.
- potato
- Waxy holds its shape, floury falls apart, and almost every potato complaint is the wrong one for the job.
- flour
- Thickener and structure. Raw flour tastes like paste, so it wants a minute of cooking in fat before liquid arrives — that minute is the difference between a sauce and a lumpy disappointment.
- eggs
- The cheapest way to turn a side dish into dinner.
- lemon
- Acid you add at the end, not the start.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
