easyWhy tonight. Same pan sauce as chicken piccata. Mild fish wants the capers.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- cod
- lemon
- capers
- butter
- flour
Good if you have them, fine if you do not: parsley.
Method
- Dredge the fish lightly in flour and shake off the excess. That thin coat is what thickens the sauce later.
- Sear it and take it out at 80 percent — it finishes in the sauce and cod overcooks in seconds.
- Capers into the hot pan for thirty seconds until they open, then lemon and a splash of liquid.
- Cold butter beaten in off the heat, fish back through. Never boil it after the butter.

Why each of these is on the list
What the ingredients are actually doing
- cod
- Lean, mild and flaky, which makes it a vehicle rather than a flavor.
- lemon
- Acid you add at the end, not the start.
- capers
- Concentrated salt and floral bitterness — a seasoning that happens to be a vegetable.
- butter
- Flavor and body in the same spoonful.
- flour
- Thickener and structure. Raw flour tastes like paste, so it wants a minute of cooking in fat before liquid arrives — that minute is the difference between a sauce and a lumpy disappointment.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
