Method
- Cornmeal rather than flour, and season the cornmeal itself rather than the fish.
- Egg first, then cornmeal, and shake off every loose grain — loose coating burns in the oil and taints the batch.
- Oil at 180C. Cold oil gives you a greasy fillet, hot oil burns the crust before the fish is done.
- Drain standing on a rack, never flat on paper. Lemon at the table.
