Method
- Ground turkey, raw rice, cumin and much more salt than feels right — lean meat needs it and the rice swells in the broth to lighten the ball.
- Roll them small and do not compact them.
- Broth on a bare simmer, meatballs dropped in and left alone for twenty-five minutes.
- Never let it boil. A rolling boil breaks turkey meatballs apart in a way it would not break beef, and there is no putting them back together.
