Method
- Build the rice first and completely — onion, tomato, garlic, then rice toasted until glassy, then measured stock, lid on, low, eighteen minutes.
- The shrimp do not go in with the rice. They go on top for the last four minutes only, with the lid back on.
- Rested ten minutes off the heat, still covered.
- Shrimp cooked for eighteen minutes are rubber, and this is the single mistake that ruins every one-pot version of this dish.
