easyWhy tonight. Paella with noodles: toasted pasta, shrimp, paprika, a little tomato, stock until it is almost dry. Lemon. Don't make spaghetti and call it Valencian.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pasta
- shrimp
- tomato
- paprika
- stock
Good if you have them, fine if you do not: lemon.
Method
- Toast the short pasta dry in oil until it is genuinely golden before any liquid. That toasting is the dish.
- Sofrito built first — onion, tomato and paprika cooked down until dark.
- Stock added all at once and then not stirred again. Stirring makes it a pasta dish rather than a fideuà.
- The strands stand on end as it dries out, which is what you are looking for. Shrimp on top for the last three minutes.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- pasta
- The sauce finishes on the pasta, not the other way around.
- shrimp
- Cooks in about two minutes and is ruined in three.
- tomato
- Sweet, sour and savory at once, which is why it holds up so many dishes with no meat in them.
- paprika
- Color and a mild sweet pepper flavor, and it scorches into bitterness almost instantly.
- stock
- Body, not flavor — that is the part people get backwards.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
