Method
- Brown the pork in batches, then take it out. Paprika goes into the fat off the heat — it scorches in seconds and turns bitter.
- Onion cooked long and soft in that paprika fat until it is almost jam. This is a Hungarian-shaped dish and the onion is doing the work.
- Tomato and stock, pork back in, then a long low cook until it falls apart.
- Sour cream off the heat, never in the simmer, or it splits into grain and whey and there is no coming back.
