Method
- Simmer the pork gently until tender before anything sour goes near it. Acid added early stops meat softening and it will stay tough for hours.
- Tomato and onion in to collapse into the broth.
- Only then the lime or tamarind, and taste as you go — sour is the whole dish and it is easy to overshoot in one squeeze.
- Greens in at the very end for two minutes. It should make you wince slightly and then want another spoonful.
