Method
- Brown the turkey hard and fast. It is lean, so time in the pan is time it spends drying out.
- Onion in the fat, then stock and mustard, scraped and reduced by half.
- Off the heat, cold butter beaten in until glossy. Mustard splits if you boil it and the sauce goes grainy.
- Turkey back through at the very end, just to warm. Thyme over.
