Method
- Never prick the sausages. That hole is where the fat and juice leave and it is the most common mistake.
- Start them in a cold pan with a splash of liquid and a lid, so they cook through gently.
- Lid off at the end and the heat up, so they brown in their own rendered fat.
- Onions in that fat afterwards, cooked soft. Mustard at the table, never cooked into the pan.
