Method
- Sausages in a cold pan with a little oil, brought up to medium and turned every few minutes for twenty. Fast and hot splits the skins and leaves the middle pink.
- Potatoes started in cold salted water, drained, steamed dry, and mashed with butter first and warm milk second.
- Onions sliced and cooked in the sausage fat for twenty-five minutes until dark and sweet, then a splash of stock let down and reduced.
