Method

  1. Sausage out of its skin and browned hard in craggy pieces. Take it out and leave the fat.
  2. Potato cubed small, into that fat, one layer, undisturbed until crusted. Onion halfway.
  3. Sausage back, wells made, eggs in, lid for a minute.
  4. The fat is the seasoning, so do not drain it and do not add oil. Hot sauce or vinegar at the table.
