Method
- Dress the potatoes while they are still hot. Cold potatoes absorb nothing and the dressing sits on the outside.
- Bacon rendered from cold, onion softened in the fat, then vinegar and mustard whisked into that same hot fat.
- The dressing is the bacon fat, not oil or mayonnaise, and it is what makes it German rather than American.
- Serve it warm or at room temperature, never fridge cold. Parsley at the end.
