Method
- Potatoes parboiled and roughed up, then into the roasting tin to start ahead of the chicken.
- Chicken salted, browned skin down, and laid on top.
- Mustard whisked into the pan juices off the heat — never boiled, because boiled mustard turns bitter and grainy and cannot be brought back.
- Into a moderate oven together until the chicken is through and the potatoes have taken the mustard fat. A spoon of cream at the end rounds it.
