Method
- Brown the chicken properly and take it out. Onion into that fat and cooked slowly until sweet.
- Deglaze with a splash of water or wine, then the mustard whisked in off the heat.
- Chicken back in, gentle heat, lid on until it is through. The sauce must not boil after the mustard goes in — boiled Dijon turns bitter and grainy and there is no fixing it.
- A spoon of cream or milk at the end rounds it. Taste before you add salt: mustard is already salty.
