Method

  1. Shred the chicken with two forks rather than chopping it. Shreds hold sauce; cubes shed it.
  2. Warm it through in a little of its own cooking liquid so it does not dry out on the plate.
  3. Tortillas heated in a dry pan until they flex and smell toasted, then kept in a folded towel so they stay soft.
  4. Onion, lime and something sharp at the table rather than in the pan. Tacos are assembled by whoever is eating them.
