Method

  1. Brown or green lentils, not red — red collapse to purée and a taco needs texture.
  2. Onion soft, cumin bloomed in the fat, then lentils and just enough water. Cook them dry rather than draining them.
  3. Draining pours the seasoning down the sink, which is why most lentil fillings taste of nothing.
  4. Char the tortillas dry over a flame, lime and cheddar at the end.
