Method

  1. Turkey is lean and will go dry, so brown it hard and fast in a hot pan rather than stewing it slowly.
  2. Cumin into the fat for thirty seconds before the meat, not stirred into the cooked meat. Bloomed spice is a different ingredient.
  3. A splash of water at the end and a minute of simmering makes it saucy rather than crumbly.
  4. Lime and salt at the end, cheddar on top. Lean meat needs more fat and more acid added back than beef does.
