Method
- Dress the potatoes while they are still hot. Cold potatoes absorb nothing and the dressing sits on the surface.
- Bacon rendered from cold, onion softened in the fat, vinegar and mustard whisked into that same hot fat.
- The dressing is the bacon fat rather than oil or mayonnaise, and that is the whole point of the warm version.
- Serve it warm or at room temperature. Parsley at the end.
